I was coming to recommend this. We just had it with a Thai curry tonight and it was great. You can bake it ahead of time and then just add it in.


OP here - this is one of our standards and was looking for other options BUT I’m glad you shared it as it may turn many people on to how delicious, simple and kid friendly can be!

I haven’t tried this yet, but I want to try using extra firm tofu in place of paneer. I prefer tofu in stews, and paneer tikka masala with tofu as a sub sounds delicious to me right now. I would treat it the same way as paneer - marinate cubes of extra firm or firm tofu in ginger, garlic, Greek yogurt and garam masala. Sauté the cubes and then add to tikka masala sauce.

I just make it in stir fry, but my trick is I cube it and bake the cubes until golden brown before adding it to the stir fry. They stay together better and absorb the sauce better.

I shred it on a large grater. Mix with a marinade (soy sauce, worstershire, sesame oil, garlic, cumin etc). And lay out on a lined sheet and bake. It's gets crumbly like bacon bits. Serve over salad or add to a rice bowl etc.

I don’t eat beef. Tell my body tofu is supposed to be anti- inflammatory. Soy is a known cause of migraines - like some other legumes and nuts.

I love tofu salad (squeeze out water from firm tofu, crumble and mix with chopped herbs, finely chopped tomato, veganaise, seasoning of your preference) and tofu scramble (scramble firm tofu with a spoonful of water and cornstarch slurry, veggies, nutritional yeast, seasoning).
