Every Asian store out there has snack sized packaged cheesecakes like that. It's super easy to make at home. It's more of a souffle and way, wayyyy lighter than western (including European) style cheesecakes.

Could you point me to a challah or osweet yeast recipe? The cheese danish recipes I googled suggested using crescent rolls or pastry dough - I’m assuming a “real” cheese danish recipe would be from scratch but if these are reasonable substitutes, it’s different…!

It is NOT like japanese cheesecake. I liken it to Entemann's, which is the absolute gold standard. Here's a knockoff recipe I found. In your case, instead of raspberry jam, just create a sweet cream cheese filling. Literally cream cheese and powdered sugar. Please report back because this is also my favorite thing (cheese danish)
