If you want to try something new next time, wrap the back of the chicken with bacon. Keeps it moist & adds flavour

I did one last week. I save the tops of cut veggies, the outer layer of onions, bits of garlic, etc. (anything but brassicas) in the freezer in a "soup trash" silicone bag. When it gets full, I roast a chicken, then make stock with the carcass and the soup trash.

Smells fantastic!

Love the smell of roasted chicken ill cook one this week too.makes great sandwiches the next day too

If you can't understand the joy of a simple roast chicken, you need to do some work (unless you're vegan or something)
