I buy the Kevin’s paleo foods and add carbs to it - onions, zucchini, sweet potato, bell peppers, etc. And serve over pasta or rice. I also use Trader Joe’s frozen indian meals and add paneer and veggies. If I have takeout Thai curry, I add tofu and mushrooms, zucchini, sliced green beans and edamame. Developing sauces takes time, so i often piggyback.

I have some friends who hire a person to cook for them and provide them with meals? Perhaps that is something you can look into? Or there are local places near you that prep a week's worth of meals as needed.

Also another thought is to freeze a bunch of meals you made already and defrost them. And then do instant rice, bagged vegetables you can microwave, etc.

Agreed. I was really surprised that such a 'healthy' brand would be so high sodium!


NP here and I noticed this too. It was extremely salty to the point where it almost tasted bitter.

Buy the salad kits from Costco. Their sweet kale kit is pretty good. Serve with frozen chicken nuggets.

Hack - I cook it in the microwave in a large glass bowl with a few squirts of water. 1 packet per person. Once cooked, I add finely minced raw spinach in it. Once cooled a bit, I also add - finely chipped cucumber, green onions, carrots, cilantro and freshly minced raw garlic. Then a squirt or two of sriracha, some soy sauce - and mix every thing. Add some roasted crushed salted peanuts and you have an amazing mouthwatering dish. It is good enough for company.



All that chopping is way too much for me. So much work.

Costco ravioli


Cook the ravioli as per instruction and remove. Blanch some fresh veggis (usually brocolli and cauliflower) in the pasta water, or throw in some mixed frozen Italian veggis in a pan - add ravioli and any jarred sauce. Heat through. Garnish with pine nuts and basil leaves and serve.

I am shocked at how good frozen Indian entrees taste, and buy them for a change-up from our usual Friday night frozen pizza.

TJ's has fantastic frozen foods, esp the Italian dishes. They are made in Italy. The frozen pastas are amazing.

Costco I think still sells Gold Rush chili in an 8 pack- my kids basically snacked on that in high school. Very good chili you can turn into nachos or load up with extra sour cream, shredded cheese and jalapenos.

I'm also one to cook from scratch every night, but I have switched to frozen grilled chicken chunks for everything and it saves so much time. You can make faster soup, casserole, or pasta chicken alfredo if your chicken is instant...

Costco sells supergirl packs of 8 soups. All are super healthy and reasonably good, though I add some cheese or crackers to some of them. I also roast up a pack of tofu from Costco in the air fryer and eat it with the soup. So my family of 3 just had soup and tofu for lunch with crackers and cheese on the side. I think if you bought boxes of 4-packs of tofu and the soup it makes 8 meals for 2-3 for $48. So cheap and healthy and pretty tasty.

Costco Cauliflower Crust Pizza. Surprisingly good.


Hack - doctor it with loads of roasted veggis (brocolli, pepper, zuccini, onions) and some cooked bacon and feta. It is truly to die for. And if you cut it in squares, it is an amazing appetizer for game nights or casual get together.
