I recommend Trader Joe’s Salsa Authentica. It’s super tasty but minimal ingredient salsa (no corn, green pepper, weird bits of vegetables a kid will complain about).
I will make Spanish rice as a side, and warm up some pinto beans. You can use the chicken for quesadillas, salads, tacos, bowls, nachos, so many meals. It reheats well.
We do the same thing but with a can of black beans as well.
