Why hadn't I thought of having some hot chocolate until seeing this? The weather totally calls for it. I even have some whipped cream. Off to make this now...

Made my DH and I mac and cheese from a box along with some salad for lunch. Needed some childhood comfort food. It didn't taste as good as I'd thought it would, lol.

DH is off to the airport for work travel, and I'm probably going to make some cookies with some blueberry syrup that I was attracted to at Fresh Market yesterday.

My dinner for one will probably be the cream of vegetable soup I made last night.

I roasted a large chicken last night. I put lemons and fresh garlic/thyme in the cavity and seasoned with sea salt, pepper and more thyme. Basted in with butter. It was so good! That will last through tomorrow’s lunch. I’ll do pasta and meat sauce for tomorrow’s dinner. My daughter just made cookies and we have lots of snacks.

We are doing Cookie and Kate's peanut soup tonight (https://cookieandkate.com/west-african-peanut-soup/) and the kids have requested pancakes for breakfast, but I'm looking for some ideas for lunch and dinner tomorrow. I have found that cooking and baking is a good way to fill time between trips outside, so something that the kids can help out with (lots of chopping and mixing) fits the bill nicely. Anybody have any go-to snow day meals they like to make for days like this?

My college kids are on their own for meals aside from dinner (welcome to anything we have). We are having lasagna and salad for dinner.
