Are you not willing to do any type of prep for the meat. There are lots of slow cooker and instant pot recipes for meat that would limit your need to handle the meat. Like dump raw chicken into a crock pot with diced tomatoes and seasonings.

I would suggest several salsas - fresh pico, a store bought mild, and something spicey.

I could not disagree more. This is one of the simplest meals to prepare and serve.

OP, everything you've got listed plus the things you mentioned in your second post look great. You might want to pick up a bottle of taco sauce (sold in any grocery where you find the Mexican foods). Sour cream and sliced black olives are also nice toppers.

You could also give both corn and flour tortillas if you'd like, but I think the majority of people will choose flour.
