Bagels with Kite Hill chive cream cheese. So good! -not a vegan, but have tried many many vegan cream cheese substitutes. I deeply dislike most fake dairy, including all the eggs, yogurt, and fake meats. I do like one type of yogurt as well - Nancy's vanilla oat milk. GL!

Skillet potato hash (dice up some potatoes and peppers), sautee with olive oil and seasoning, maybe some kale. Non-vegans will like this too.

Is she vegan for dietary changes due to health issues or is she vegan for political reasons. If the former, try to use whole ingredients that happen to be vegan and avoid the processed things aimed to substitute (eg Just egg or vegan waffles) How does she tolerate soy?

I think the suggestion to ask her what her preferences are is good.

I have a sibling who is vegan.

Roasted potatoes and peppers is a good one.

Avocado toast or peanut butter banana toast is a good one. Just check your bread.

Dairy free yogurt and fruit. As someone with lactose issues, I like the coconut milk ones best. Trader Joe's has the superior oat milk.

Vegan sausage is okay, there's a vegan version of American cheese that you honestly can't tell the difference, but I have yet to find vegan eggs that aren't incredibly gross.
