Unless I know you well, I am probably not going to be in your fridge assembling a meal for myself. Put the food out for your guests..doesn't have to be in a formal way.

PP here. If you're staying in my home, you are a close family member or friend and you know the drill at my house (because I have communicated it's an open kitchen, I have XYZ available, help yourself, etc.).

When I have guests we generally have meals together so we take food out and eat it at general meal times. Sure its an open kitchen but we put food out for meals.

I would do simple sandwiches. Turkey, ham, cheese, bread, maybe a tub of chicken salad.

We serve a breakfast casserole around 8 or 9 am and then put out a giant tray of fruit, cheese, nuts, veggies, chips, and dips at noon. Thanksgiving dinner is at 4.

Why would you invite strangers you don't know well to your house at all, to say nothing of a national holiday devoted to family?

There are a whole lot of people between "strangers" and one's mom. Basically I am not going into most people's fridge to make a meal for myself. If you are staying at my house, around lunch time I will put out some easy to grab items for people to enjoy (or skip). Its really about 5 minutes of effort. If that is too much perhaps you should not host.

Wouldn't you know them well if you were staying with them?

If you aren't serving a meal, I assume that you are not really expecting people to eat. It would be impolite to make a meal for myself when you are not eating. Staying with my mom would be a different story (though she would for sure put out sandwich fixings for people to grab) but most other people no.

Some of you people are so uptight.
