Because nearly all food is better served and consumed immediately or soon after it has been prepared. Cornbread is in this category.

Yesterday’s cornbread might be suitable for corn pudding filler, or dog food.

I made Jiffy corn muffins today. Double bagged half while warm to freeze for another holiday. We will warm the rest Thks and day after. They are good imo.

BTW I grew up in the South. Jiffy mix is excellent. I tried making my own and it wasn't better and a lot more expensive. I don't add corn kernels or cheese or anything.

Can I make muffins out of this recipe? I know the cast iron skillet makes it so crispy. I might not get that in my muffin pan. Thanks!
