I’ve never really understood why macaroni and cheese is listed sometimes as a side dish, it doesn’t make sense to me. I think of side dishes as consisting of mainly vegetables.

I suspect you have never had good macaroni and cheese. I bet you think all macaroni and cheese is made with a powder that turns into and orange liquid-y “cheese.”


I personally like putting some goat cheese in my Mac and Cheese blend. Gruyere or another melty cheese is a must but then after that go nuts. I've never tried it but I thought adding Boursin to the mix could make an interesting Mac and cheese.

I make Julia Child’s cornbread stuffing without the sausage. You can also skip the egg and use vegetable broth instead.

I always make a batch with and without sausage, Mac and cheese, sweet potato casserole, mashed potatoes and crescent rolls.

2 or 3 salads and no vegetarian goes home hungry ever.

I have a cousin who's vegan (and a bunch of other things) and we made him a red beans and rice dish. It depends on what people like.

Vegetarian turkey substitutes tend to be pretty gross, TBH.

Also just make the side dishes vegetarian too. You can put chopped bacon on the side, for instance, and use vegetable stock in the stuffing.
