Make it a jumping off point for south or southwest China (which is what I did) or SE Asia. (I went to Guangxi and Yunnan.)
I'd keep a very close eye on any Covid protocols -- I'm not sure if Hong Kong had all the same lockdown issues.

Eat (too many good restaurants to list but everything from cheap eats to fine dining), go up to the Peak and walk the loop and take photos, take the cable car to see the Big Buddha, walk through the zoo/aviary/HK park , bring a bottle of wine and get a foot massage at Happy Feet, window shop in Central, take the Star Ferry to Kowloon, grab a drink at Ozone Bar at the Ritz Carlton. Go out one night in LKF. Then fly to Vietnam or Cambodia or Thailand and have a beach vacation!
+1. HK is great fun. If you like Asian food you’ll be in heaven. The above is a good list. You could also consider taking a ferry to an outer island and doing some biking/nature hikes too.
