I add the following to two small cans or one big can of black beans (strained, rinsed): salt, pepper, garlic powder, cumin, oregano, chipotle/adobo powder or sauce from the can, a few squirts of tomato paste, a little cider vinegar, and a pinch of sugar.
I caramelize some finely diced onions before adding all of the above plus about 3/4 cup of water. Cook on medium-low for about 20 minutes. Add a little water if it dries up until it's the consistency you want (you do not want them to dry out). Toward the end I add a handful of chopped cilantro and let it cook long enough to not look fresh anymore.
