Backsplashes that are very trendy now are zellige type tiles, slightly irregular tiles that have a mix of matte and glossy finishes as well as subtle color variations, like this

Cloe and Celine tiles by bedrosians are really popular examples of this trend, either stacked horizontally, vertically, or in herringbone.

Personally, I think people will get sick of this look, I know I already am

Well, if you look at it that way, anything OP buys is going to be dated in max of 10 years anyway.

No kitchen stays timeless. Unless it's in some extremely period style like Country French.

The point is to not pick something already dated like those glass mosaic tiles, and to resist picking something just because you see it everywhere right now(zellige). Pick something that you will love to see every day. I chose a fluted tile that has never been trendy in the past and is not trendy now, but I love the way it looks.

+1 I don't see anything I like on the links above yet (not a design maven, but into aesthetics).

This X 1000. No grout to clean and it visually makes the space seem so much larger.

It will look like an operating room.

I would go with blue. White and blue is classic.

You don’t want to go for small tiles in a small kitchen, as that looks busy and makes the space look even smaller.

What about white, but with a dark grout?

I would consider a tile mix like the link below (not perfect colors) for a short backsplash.

Colors like this could work (different tile type)....

Yes, but stacked not staggered.

OP is asking for clean and classic. The above link would work well, as would the PP's Tilebar Montauk sand color. Add richness with brass hardware.

Everything else linked is modern and trendy and will look cheap in a small white kitchen with clearly inexpensive cabinets and countertops.

No. This will make your space look small, looks cheap, will go out of style and is too busy for a small kitchen.

PP. It depends on the kitchen. I agree it could become dated. But I would like to see color. White on white on white is boring.
