I've made this to rave reviews but for transport would have tomato and cucumber mixture and pitas separate and assemble at the location (super fast to assemble)

Or a big tray of roasted vegetables - I use red onion, zucchini, bell pepper, eggplant, carrots, sweet potatoes, brussel sprouts, and whatever else looks good. Chop everything into 1" pieces. Start the tougher veggies first, and when almost done add the bell pepper, zucchini, etc. Bring in a foil tray.
Dessert:
Strawberry shortcakes - slice a bunch of strawberries and macerate in a bit of sugar. Bring storebought shortcakes or make your own. Can of Redi-whip.
Brownies always disappear quickly.
Mains:
Teriyaki chicken skewers
Noodles with peanut sauce
