Caprese skewers are always a hit, I drizzle mine with some quality balsamic.

Greek pasta salad is great, I make a simple vinaigrette with olive oil, balsamic, ground mustard and honey

I like the cowboy caviar suggestion above

Ham rolls or biscuits and/or deviled eggs. Homemade macaroni and cheese is always popular.

- quinoa with feta, cherry tomatoes, cucumbers and olives. Lightly dressed with oil, vinegar and spices
- penne with fresh basil, arugula, cherry tomatoes (sautéed) and mozzarella pearls
- raspberries, blueberries and chopped strawberries dressed with honey and fresh mint

These all sound so good - would definitely come to your potluck, PP!

I used to make a version of this - essentially rice crispy treats, but using Golden Grahams cereal instead of rice crispies, and adding chocolate chips. Very easy s’mores bars

Why not do a repeat?

OP - other folks in this group liked it and started bringing it too! So, want to branch out a bit.

I've made this to rave reviews but for transport would have tomato and cucumber mixture and pitas separate and assemble at the location (super fast to assemble)

I may try this this weekend, how do people think the graham cracker base would do when sliced?

https://www.msn.com/en-us/foodanddrink/recipes/these-irresistible-s-mores-brownies-are-our-new-summer-dessert-obsession/ar-BB1noEJt?ocid=BingNewsSerp

I've also seen recipes where a graham layer is baked first, this is obv quicker and a bit more smores authentic but not sure about the cutting part.

Thoughts?

Bring things that are in chunks and easy to eat with a fork.
Nothing that will fall apart and hard to put into your mouth. I love quinoa but it's too light and fluffy unless you use it like a coating on pasta or veggies.

Or a big tray of roasted vegetables - I use red onion, zucchini, bell pepper, eggplant, carrots, sweet potatoes, brussel sprouts, and whatever else looks good. Chop everything into 1" pieces. Start the tougher veggies first, and when almost done add the bell pepper, zucchini, etc. Bring in a foil tray.

Dessert:
Strawberry shortcakes - slice a bunch of strawberries and macerate in a bit of sugar. Bring storebought shortcakes or make your own. Can of Redi-whip.

Brownies always disappear quickly.

Mains:
Teriyaki chicken skewers
Noodles with peanut sauce

Great ideas! Best ones here I see
