What do you mean by "very picky"? If it's that someone doesn't want cheese, that's easy to remove. If you mean you have someone who doesn't eat deli meat, get a veggie option with hummus. Or do you mean you have a level of pickiness where they won't eat the sandwich because it touched a ham sandwich? *Wanting* a special order isn't a problem, but being able to find something to eat when you don't get your special order is the question.
Maybe picky was the wrong word. Our family has preferences.
If we go to chipotle, burrito bowls very different with meat and toppings for one kid, I like a very specific burrito with specific items. One kid wants everything plain. Another wants everything. We all hate beans. If there was any beans in any of our orders, we probably wouldn’t eat it.
For sandwiches, it may be tuna, cheesesteak, Italian. Han and cheese, roast beef. We would never all eat the same thing.

Are you the OP? This is not the time to be picky. These are HS kids, and they should understand that sometimes, you might not get your first choice in group settings. I was a soccer mom, too, and we are pescatarians. A couple of times, there were team meals, and my kids would take the sandwich given and remove the meat and tomatoes, and were left with cheese and lettuce. They did not like cheese and lettuce sandwiches, but it was that or nothing. The easiest and best is Chick fila sandwiches, we get 2 per boy, pickles on the side, extra chick fila sauce. They will give you a warming bag to keep them warm.
2nd is Chipotle and they can make their own, it's a buffet and they give you everything you need.
