The yogurt has fat and protein. Would be great to have some chickpeas, nuts or lentils in the salad too. Very considerate of you.

Indian food is great for this - saag or butter paneer, aloo gobhi, raita, rice can all be prepped ahead. Store bought naan as well. You just need 10 mins to heat everything before serving.

Maybe you can get the falafel, etc., catered? That way you can just pick up.

Op here: thanks so much, I appreciate all the suggestions! I have five vegetarians in groups group so definitely want to do a fully vegetarian meal.

A wrinkle I left out of my post is that many of the guests are of Mexican heritage so I am a little hesitant to lean into enchiladas, tacos, etc. But maybe that is overthinking.

Leaning toward falafel, pita, and salads. Going to practice grilling halloumi as another option.
