My family makes the dal from this recipe very often. Serve it with seasoned and roasted eggplant, zucchini, cauliflower, whatever. You don't need to to the intricate stuffed eggplant if you don't have time or interest.

We also have "snack plate night" for dinner at least once a week: hummus, tzitiki, feta, assorted chopped veggies and pita for dipping. We also add nuts but you could skip. those.
