I do this. A lot of these recommendations I kinda don't get because we never have much left over chicken. Like when I make chicken enchiladas I use the chicken from a whole rotisserie chicken, bulk it up with spinach and mushrooms, and it's about right for 4 people and maybe 2 portions of leftovers. When we eat just chicken, any "leftover" is really minimal. Enough for some salad toppings or I make stock.
