I make "ladera" - vegetable stews where things like green beans, eggplant, zucchini, or potatoes are cooked with onions, tomato, and olive oil. Lentil soup or bean soup. Stewed chick peas. Spinach rice (spanakorizo). All of these are vegan. Greeks usually serve these vegan meals with feta or cheese, unless doing a religious fast.
Mediterranean food is my favorite food in the whole world! Such wonderful vegetarian options.
that spinach and rice dish sounds delicious =- def going to try making it
i'm vegetarian outside of eating fish a couple time a month. so every night is vegetarian (except once or twice when it's fish) - and i'd say vegan every once in a while. i like vegan food, and the vegan philosophy, but my husband does a lot of the cooking and he isn't even vegetarian so i feel like he'd throw in the towel if i asked him to make more vegan food. i do eat vegan fairly often if i am cooking for myself or going out.
