NP. These recipes, including the hash brown and shredded brussel sprouts, sounds delicious. Cauliflower fried rice-- why didn't I tihnk of that? Do you use a recipe for the sprouts? If so, would you mind sharing. Thanks.
So, the hash greens, as we call them, I make by frying some bacon, pouring off most, but not all the grease, and the frying the shredded sprouts in that. Not sure I'd want to do processed meat if I was pregnant. I usually serve them with the bacon, French Toast and fruit, because I'm not low carb, I just want my kids to eat something green, and I actually think they taste great.
We usually do a variety of latkes, but if I was just doing zucchini, I'd probably do them something like this:

and for the fried rice, I usually do 1/2 cauliflower, 1/2 brown rice, but all cauliflower tastes fine.
