Cooking on the stovetop always results in shells that won’t come off, for me anyway! Then I made my eggs in my Instant Pot for years and they were always perfect. 5 minutes on manual high pressure, 5 minutes depressurization time, 5 minutes in an ice bath. Now I make them in an egg cooker— $15 on Amazon— because clean up is easier and it’s a bit faster. Shells come off easily in there, too.
