Baked chicken tacos are a favorite at my house. They also make great leftovers.

Turkey burgers are great. You can add a surprising amount of chopped fresh spinach for moisture. Also a scallion. Other nice additions include mustard and shredded Swiss cheese. Your favorite herbs/seasoning salt. And a few bread crumbs and egg whites, to hold it all together.

Trader Joe's turkey meatballs are good.

Gordon Ramsey has a delicious turkey burger air fryer recipe you can find on YouTube. The burgers are juicy not dry.

I sub ground turkey 1:1 in most recipes. The only ones that don't work are burgers and meatloaf. You'll need a recipe specifically for ground turkey for that to work. I've also found that since ground turkey is lower fat, I often get away with skipping the draining step after browning the meat.
