Fredericksburg has lost a little of its charm over the years, less German, more generic, but worth a trip. But Highway 290, the way from Austin to Fredrecksburg, has lots of wineries that are fun little stops. The winery industry has been booming the past few years. Also Wildseed Farms is a garden center good for a quick stop to see native flowers if they are in season.
Fredericksburg is more crowded now, but we always have fun when we go.
If you are history buffs, make sure to go to LBJ's Texas White House and the Johnson City birthplace. He was a really influential president, in terms of legislation, love it or hate it.

I would recommend flying into San Antonio rather than Austin. The traffic in Austin (both air traffic and roads) have increased significantly. Outside of San Antonio, consider Boerne and Kerrville (YO Ranch resort) as well as Fredericksburg.

Not a resort recommendation, but definitely book a Hill Country bbq/beer tour (with a stop at Desert Door sotol distillery).
