Cook 2 cups lentil to 3 cups water, can better than bouillon and spices, easy peasy. I eat this almost everyday. I love lentils. Usually with green bc it's easier.

Also a few cups broth, tomato paste, a can of coconut milk, Goya package of red lentil, curry and spices. Yum!

Try experimenting instead of following a recipe so you will be able to be creative and everyday tweak it a little bit differently. Then it's always appealing to the plate imo.

My kids rejected the Jamie Oliver sloppy joes and I didn’t love them. They felt like kid food—gloppy.

The most popular in our family is make enchiladas but replace the ground beef with lentils. I’ve thought about doing something similar with lasagna.

If it’s just for me, I make lentil soup, or cook some lentils with better than bullion, and make a grain salad with that, brown rice, some chopped arugula and some chopped grape tomatos. You can add in some creamy Caesar dressing but don’t really need it due to the flavor from the better than bullion. It makes a good lunch.
