That is the beauty of the suggestion you are mocking - it is all food that would be good sides for everyone with the entree OP is cooking. And all stuff that most normal people eat and enjoy. So it’s not making a second dinner. It is making a delicious dinner.

Another vegetarian here and I think falafel would be a great gesture of inclusion. I thought of it too when I saw you were serving chicken shawarma. Also, make more than just the vegetarian will eat, as many omnis will want to sample it too.

When I do chicken shawarma, I usually do half chicken and half tofu or paneer. A lot of non-vegetarians like the veggie version of this as well. You can keep everything else the same. This is my go to for parties.
