Skinnytaste has a kid friendly turkey chili that my kids love. I like a lot of her recipes and find them pretty simple and quick.

Spinach, tomato, mozzarella omelette
Sheet pan cubed tofu and broccoli florets, toss with soy sauce and noodles
Herb roasted chicken legs, with Amy’s mac and cheese and a salad
Honey and soy glazed salmon (there several are recipes online) with rice and a salad
Meatballs and veggie chunks on a skewer, with rice
Turkey kielbasa, red potatoes, zucchini sautéed
Taco cups — several recipes online, Spanish rice, fruit
Turkey meatloaf, mashed potatoes, green beans
Sheet pan chicken fajitas
Crustless spinach quiche

I make chicken and black bean enchiladas for my son to eat (he's a teen). Would be fab with just black beans and veggies of choice.

My Egyptian husband makes koshari (not super easy but delicious) and Shakshuka quite often.

I make an Indian dish knock off - spicy eggplant. It's best if you can roast the eggplant over charcoal but it's still good baked in the oven. Eggplant, green peppers, onions, whatever else you like. I use hot pepper too, but you can omit if your kids like things more mild. Then add canned diced tomatoes. Use garam masala and black mustard seeds. Serve over rice and garnish with cilantro.

Quiche for dinner.

I’ve made this recipe with chickpeas or vegetarian chicken substitute before. Can chop or roast everything in advance and add the feta later. I serve with quinoa.
