Not necessarily the healthiest but very tasty - roasted pork loin stuffed with sage and garlic as well as roasted diced potatoes crisped up in the oven.

We have family in town for the holidays. I made a double batch of Naz Deravian’s yaki udon recipe (NYT Cooking) and it was a huge hit.

Chicken tacos - shredded thighs in the instant pot in a delicious sauce
With lots of toppings

Last night was a Melissa Clark one pot cheesy pasta bake if you want a non-chicken idea.

Sheet pan cashew chicken. Added in some bamboo shoots and water chestnuts and zucchini since we had extra in the fridge. Good way to use up odds and ends.

Well I made delicious kobucha Japanese pumpkin yesterday, simmered in dashi broth, with leftover duck, but my teens hated the pumpkin, and this evening they're cooking ramen with turkey breast, egg and broccoli.

I suppose I should just be happy there's protein and green in there.

This is the best! I recently learned how to make homemade pierogies -- it's actually pretty easy.

What’s your recipe

I learned how to do it watching extreme-frugality menu YouTube videos. The pierogi stuff starts at 10:48ish.
