We were invited to a party and asked to pay. I’m not offended. They serve really good food, but it’s expensive and none of us are rich. I’d rather pay a little money to be able to spend a fun evening with friends over good food and drink than stay home in front of the tv.

Is this a party oriented around a holiday activity (baking, crafts etc and charging for supplies)? That could vaguely make sense, although not something I would ever do.

Maybe just new for me.
The only exception I can think of to this being absolutely weird and a no-go is if the event is a fundraiser and the “cover charge” is meant to go to the charity being honored.
But for a regular get-together with friends? So I’m supposed to pay a fee, everyone is driving to you while you take our money to strongarm the menu, drink, and atmosphere, and once there I would still be expected to act like a normal thoughtful houseguest because after all, we’re not at a restaurant. Even if I tried to go along with this, I would definitely somehow end up offending you because we’re just not going to be on the same page about what is expected of everybody!

I've never heard of someone doing this. Absolutely ridiculous when, as the host, you can choose a time and party format that work for your budget. The only time our friend group has done cash contributions for a party was when we moved our usual annual restaurant dinner to someone's house due to covid concerns, and we all split the catering bill.
