I wish allergies listened to these classifications. My mother who’s allergic to tree nuts is also allergic to coconuts and has found the recent trend to just sub almond milk or coconut cream in everything without warning a challenge.

+1 on the cocoa.
Evaporated milk can be used in scalloped potatoes (or anything scalloped, such as corn). It is also very good in for chowders. It may have been a frugal or practical solution to not having fresh milk or cream on hand until the milkman came around again! But some of the best old recipes use it!
