Is it 40 people plus 20 kids or are the kids included in the 40? Either way the host needs to provide some guidance. The host should make clear that people should bring enough of what they choose for 40/60 or should indicate that multiple people are needed to bring a certain item.

We host a Friendsgiving each year, but it's not a potluck. When people ask what they can bring I always rotate between wine, sourdough rolls, dessert and flowers.

But I think it's the hosts' job to make sure there's enough food for everyone, not the guests (obviously I don't do potlucks).
