So many delicious recipes here. If you are interested in stuffed red peppers, this is my absolute favorite. It is time consuming to prepare and I always used real cheese (you could try substitute), but both vegetarian and non-vegetarian guests always loved this.

I wonder about the dressing, is this enough to be delicious?:

lemon juice with the tahini, the rest of the garlic and enough water to make a dressing.


DP- I make a pretty similar dressing to top veggie/grain bowls, but add salt, pepper, and a bit of maple syrup.


Thanks! I was thinking it might need a little sweetness and salt, pepper, maybe even an herb like thyme would help

My family loves these.

We also make a king oyster mushroom pulled pork.

Only one family member is vegetarian. However, the others are all happy with these two dishes.

I made this a couple years ago and it was really good- although I seem to recall that the rice took longer to cook than estimated by the recipe.

My vegetarians love a butternut squash gnocchi with sage brown butter sauce and mushrooms.

Oh this is a good possibility! I'd love to add protein.

The NYT gratin sounds excellent too, but it would be too many swaps to avoid the dairy.

You could make a stuffed acorn squash. Use traditional stuffing and seasonings. Add mushrooms and spinach, or whatever you like to the stuffing.

I am the fried mushroom poster. Someone brought it to our house last year and it was wonderful! But I think it would be hard to make without dairy.

I forgot, we also had a stuffing with vegan sausage, which was a nice addition. Same person brought that.
