Paneer tikka kebabs. Even the die-hard carnivores gobble these up at my parties.

Indian food is very vegetarian-friendly. You can make it mild, but still full of flavor. My kids can't handle much heat but will happily eat dal and rice, aloo gobi, butter paneer/ saag paneer, chana masala, etc.

In the rotation -

Impossible chicken Patty Parmesan style with pasta

Avocado toast with egg

Baked potato with black beans,broccoli, avocado, tomato and cheese

Stuffed shells

Yogurt parfaits, oatmeal and chia pudding for breakfasts
