I can't understand why I do this for this dish and not any other.
I thought this was going to be about making it (and not the $75 kind!).
I love love love ricotta cheese so I want that layer to be thick and stand out as ricotta-y. That part works okay. But then I worry about it being dry so I think I slop in too much sauce. I never get good squares. It's always a slide-y mess.
