+1 Italian pizza is by default well-done. But it also has a much thinner crust than many American pizzas, so doneness is less of an issue.


There is no singular Italian pizza. There’s neopolitan, Roman, Sicilian, paddle pizza, pizza al taglia (or is it taglio?), and so many others, and not all have thin crusts. Eat what you like. Some people call it burned, some call it charred, some call it a crime against pizza, and some call it perfect. I like napoletana, whisked in and out of the oven in about a minute. The middle of the pizza is pliable and tender, the crust is puffy and blistered and the whole thing falls apart like a newborn lamb. I eat it with a fork and knife. My second favorite is ny style - flopping over the plate, flat, chewy crust, folded in half, eaten with one hand while running for the train.

Jets will be opening in Alexandria in the near future. They have a “well done” option on their app to give the pizza a bit more crunch and texture, instead of the standard soggy/gooey mess that most local places specialize in.

When I order pizza delivery, we always expect to throw it in the oven when we receive it. Very rarely is it as well done as we like it.
