Whenever I hang out with Italian in laws they love:

Fried mozzarella
Stuffed mushrooms with pork
Chicken marsala
Chicken scarpariello
Chicken parmesan
Italian wedding soup
Meatballs with red sauce and spaghetti
Lasagna
Baked ziti
Broccoli rabe with olive oil and sausage pasta

Chicken parm!!!
Baked ziti. NYT has a good recipe with sausage
https://cooking.nytimes.com/recipes/1020811-cheesy-baked-pasta-with-sausage-and-ricotta
-Spaghetti & meatballs is a classic, but most meatballs are horrible. Mine are delicious. Italian Americans make a “gravy” (tomato based sauce) with sausage and meat.
-Cannelloni
-Pastas- fettuccini Alfredo, bucatini carbonara, linguini with clams, Cecio e Pepe.

Enjoy! And give your sweet MIL a break.

Ravioli. Lasagna. Chicken parm. I think cheese is a big part of American Italian food.

I’d pick up a lasagna at Vace (normally we’re a meat family but their spinach lasagna is delish), make shrimp scampi another night, and keep the other nights lighter - there is a limit to how much pasta and heavily sauced foods I can eat.

She always cooks what her husband likes, who is from Ohio. She rarely gets to do things she likes.
She is visiting us by herself and I know in general that she loves Italian American food. DH wasn’t helpful.

This. I am Italian American and I like and cook a variety of cuisines, including American fare. I also love healthy Mediterranean dishes from the region….Greek, Lebanese, Spanish in addition to Italian. What do you like to cook?

And you of course have no way of communicating with her directly to ask her if she has any requests.

How did the struggle with food come about in the past? Did she say she didn't like your food? Why do you think she would enjoy food from a random list of Italian American dishes? I am Italian American and that is my favorite cuisine but I don't like many of the dishes mentioned here whereas I do like many dishes cooked by relatives born in Italy. If I were greeted with a big dish of spaghetti and meatballs I would be very meh.
