She always cooks what her husband likes, who is from Ohio. She rarely gets to do things she likes.

This. I am Italian American and I like and cook a variety of cuisines, including American fare. I also love healthy Mediterranean dishes from the region….Greek, Lebanese, Spanish in addition to Italian. What do you like to cook?
And you of course have no way of communicating with her directly to ask her if she has any requests.
How did the struggle with food come about in the past? Did she say she didn't like your food? Why do you think she would enjoy food from a random list of Italian American dishes? I am Italian American and that is my favorite cuisine but I don't like many of the dishes mentioned here whereas I do like many dishes cooked by relatives born in Italy. If I were greeted with a big dish of spaghetti and meatballs I would be very meh.
