For Monday, maybe shake and bake or bbq sauce and then bake the chicken so you don't have to stand there frying it? Other side options with it if you don't want to do potatoes again could be baked sweet potatoes, mac & cheese, biscuits (buy them in the tube) or corn (just warm up some canned or frozen). If you're doing corn, you might want to do a non-corn stuffing on Sunday...stove-top would be easy and good!
Pizza and a veggie tray sound like a wonderful way to end the visit.
For desserts, ice cream is a great idea (maybe not on the pizza night since that's a lot of dairy). An angel food cake (that you buy) with some thawed frozen strawberries and whipped cream could be nice. Other options: jello (this could be good on the pizza night since it's non-dairy), chocolate or banana pudding, brownies?
OP, your menu sounds delicious! I was going to suggest carrots with the pork meal, either glazed or roasted.
