OP get a book themed for a hobby the parents enjoy, a team they support, a city they live in, etc. while not classic, they’re fun and they’ll get a ton of the classics

A book we got at the baby shower and got a lot of mileage out of the Rosemary Wells illustrated Mother Goose.

My kids loved Giles Andreae books.

Rumble in the jungle, Commotion in the Ocean, Giraffes can't dance.

Looks like there might be a few newer ones and you can get paperback or board books.

The Bench is about a father and son. That doesn't seem right for a single mother...

Our kids loved Subway by Anastasia Suen, and it's appropriate for very young ages, starting at a few months. Especially good if the parents have a connection to or like NYC.

Get several of the Dr. Seuss "Bright and Early Board Books" - "Fox in Sox", "Hop on Pop", "ABC", "Mr. Brown Can Moo, Can you?", "There's a Wocket in my Pocket" to name a few.
