I don't use a recipe for enchiladas, just usually make it as a 2nd meal after we have roast chicken. Just shredded chicken, shredded cheese, a bit of the jarred sauce + any vegetables I happen to have around (onion, pepper, etc.). Mix together. Soften corn tortillas in the microwave, fill/roll up with the chicken mixture and put those in a casserole dish. Depending on how much chicken I have I'll use a smaller or larger pan. Pour jarred sauce over it and a bunch of cheese. Stick in oven a 375 until it's all bubbly.
