I would not make both salmon and chicken. That's more work.
What do they like to eat? Usually, people stick with Chicken. Maybe they may like pulled pork.
When I turn the oven on to cook, I roast chicken (thigh, breast, leg. all with skin) and all the vegetables with it: potatoes, broccoli, onions, brussels sprouts, carrots. I usually start with the chicken and potatoes first. All the spice you need is salt, paprika, and maybe garlic. You can use the oil from the chicken for the veggies. And add some skinless chicken tender for those who do not like skin. It's very simple. The time consuming part is cutting the carrots from whole carrots. That's about it. All can be prepared ahead of time except for the cooking.

I'd pick at that and be miserable. I hate lemon.

If she has a sensitive stomach, keep it simple, so she can eat it. grill salmon and chicken. Make some roasted potatoes and roasted vegetables. Perhaps bake some fresh bread or rolls if you want to show you made an effort.

Do salmon and chicken the same way - so both are "special" - for instance, do a pistachio crust on both. Not spicy, and addresses everyone's needs.

+1 Especially since she said her husband would be thrilled with salmon. If she doesn’t like it, sounds like he rarely eats it. Both is a great solution.
