Go to H Mart. They have cases of precooked rice that heats up in 2 minutes in the microwave. It's more expensive than buying huge bags of cheap rice in bulk, but not more expensive than buying bags of specialty rice from Whole Foods. I discovered it when we were remodeling the kitchen and needed microwave staples, but love it so much that I'm still buying it a year later!

I will do a roast beef (layer bbq sauce on top of it and put on low for 8 hours) over the weekend and then just slice it and put in Tupperware in the fridge for the week ahead. I like it in sandwiches, my kids will eat it for dinner if I quickly heat up some frozen vegetables to eat along side, etc. It is very versatile.

I also double batch things that freeze and reheat well:

Lasagna
Eggplant parmigiana
Chili
Split pea soup
Gumbo


I just made a crockpot if black beans that we’ll use in burritos, enchiladas, beans and rice, etc.

Canning burger and beef cuts give the meat a really developed flavor. My kids prefer spaghetti sauce made with the canned beef, because it tastes like Sunday sauce that cooked for hours and hours. I use the Marcella Hazan marinara with a jar of canned ground beef, delish. I brown the ground before canning.

I also use raw pack method for canning roast beef cuts. You can make a roast beef dinner in 30 minutes start to finish, and again it tastes like you slow roasted all day.

I also prep and can apple pie filling from our orchard. It makes a delightful, low sugar, not too sweet apple pie with 5 minutes labor (making the crust). I guess you could do storebought crust too, but that’s never good.


good god.so is the meat still raw after the canning process or does it get cooked...?

I buy a bag of cut up cabbage for coleslaw and then proceed to add some to everything I can get away with.
I wilt it a little to add to stir fry. I add it to soups. Sometimes to meatloafs, etc.

I’ll make a big thing of pulled meat with neutral seasoning (today I’m smoking a pork butt, but often it’s chicken thighs in the crock pot and use it for a couple different dinners/lunches.

For example last weeks chicken became:
Two batches of chicken/veggie enchiladas (one for freezer)
Waldorf chicken salad (for lunches)
Chicken/bean empanadas (freeze some for easy reheat lunches)

Plans for todays pork butt:
Pulled pork sandwiches
Carnitas
Freeze the rest for rice bowls or some easy future dinner

Not unusual, but whenever I bake banana bread or muffins or whatever, I always do a double batch and freeze half. Same for chili.

I’m always grateful to have something homemade to pull out rather than processed/takeout.

I use a prepared meal kit or sauce and bulk it up to double or triple the serving size. For example, I’ll use one or two Kevin’s Thai curry kits, add onions, zucchini, squash, bell peppers, chicken or tofu, coconut milk, yellow curry paste, etc. For some reason it’s much easier than making a curry from scratch and I can somewhat control the salt/sugar level. I keep one day’s worth of leftovers and freeze the rest in portions for later.
