+1. We're not in sub sahara Africa. I assume most people in the DMV have a/c. Just cook like a normal night. Now if you don't have a/c these ideas are actually ok.

Pesto and shrimp ver spaghetti. Some stove top heat, but nothing too bad. Will make some garlic bread in the toaster oven.
Had sloppy joes from the freezer last night. 5 minutes to warm up on the stove top. And picked up Popeyes fried chicken with homemade broccoli salad and corn on the cob for Labor Day.

Tacos. All stove top. That was last night. Tonight it's some nachos made with the left over taco meat for teen, and fish tacos (breaded fish filets cooked in air fryer for ten minutes) served with a quick veggie fry (sliced onion, green pepper and half a zucchini sauteed in pan with a bit of olive oil or marg for a few minutes) for the parents. Heat up refried beans in microwave, make fresh salad and boom, dinner. Ice cream with a cookie for dessert. Super easy.

Op here - great suggestions so far! I’m going with an earlier rec to make Turkey taco salads tonight with lots of veggies. And will probably make slow cooker pulled chicken tomorrow night. Not really seasonal but the pp mentioning pulled pork gave me a hankering for it.

I wish my kid and dh would eat BLTs and tomato sandwiches! They all have a weird texture thing with tomatoes (I know - what’s wrong with them??)
