Increase the shelf prices on everything in the store to compensate for the cost of extra needed security.
Make the neighborhood aware that's why their prices are higher.

Options discussed were a complete online model or placing everything behind glass (basically present your list to clerk, they retrieve the items, once payment is received you are given your groceries).
