Not the person you're responding to, but quality does matter. Read the studies. Yes, if you chose to have meat only do it small quantities and not often-use it more like a condiment, and make vegetables the star. That said, big difference between grass fed and the regular run of the mill red meat.

Cabbage and Kimchi are great- I hesitate to buy grocery store kimchi though, feel like a legit Korea restaurant source is better. Also, I avoid artificial sweeteners and processed food.
Get the book "Fiber Fueled" by Dr. Will Bulsiewicz, or just follow him on Instagram. Some of the claims in the book are a little too sweeping/based on cherry-picked evidence for me to say it's 100% solid science, but it DID change how I approach eating and has really helped my GI system.
