I didn’t grow up in the Midwest, I grew up here, but yeah when you’re only eating baked chicken breast, potatoes, and frozen peas, an American Chinese menu is a revelation.

Did you really need that explained to you, or are you just trying to be a condescending dick?

Wouldn't say it's an example of "expanded palate" so to speak, just was the first foray into a flavor that wasn't just salt, pepper, maybe garlic or italian. So it was different to me even if the only the Americanized version of it, as it was just different than anything I'd had at that point in my life. I guess soy and sweet is still a unique flavor if you never had it at all.

Often, yes. Even in the large suburbs. Cities obviously have more options.

When I was in middle school I started being more curious which I indulged in at restaurants. By high school I was really branching out and cooking for myself some nights and tamed down versions for my family other nights.
