If you are having a taco bar, why not include one of the more basic meat choices? That is sort of the reason folks have taco bars- they tend to have basic food that appeals to everyone. Should people expect more? No. But the OP asked for suggestions and folks are pointing out what she could do to appease more guests. But it sounds like the OP knows her guests well.

I'm not considering refried beans. But whatever beans I make will be vegan.

I feel like avocado and chickpeas are as filling as sweet potato and black beans.


Looking at the pic it looks like such a scant amount of filling is in each taco. The sweet potatoes are denser and I think would be more filling. I think the ceviche would be good as a side salad instead.

You're not even going to enjoy your own party being a short-order cook.

And you haven't even mentioned drinks - blender/margerita mix, right??

I'd streamline it and keep it much more basic.

Add pickled red onions (even some picky kids like this!) and lime. I would also do a cilantro yogurt sauce. Look at Half Baked Harvest for some ideas. She always has yummy sauces with her taco ideas.

I'm not considering refried beans. But whatever beans I make will be vegan.

With fish I prefer black beans. I e never seen refried with fish tacos and I’m from the SW where we sat retried beans with almost everything.
I also like chopped mango with a fish taco. My picky kid does a cheese, tomato and mango taco.
The Trader Joe’s corn salsa goes really well with fish tacos.
I might also add guacamole and agree grilled veggies might be a nice addition if you want more. Or just make a side salad—I like arugula, orange, jicama with a honey-chili-cumin vinaigrette.
