For a nice summer meal, I would make a cold bean salad (look at Smitten Kitchen for this!) and a tomato or zucchini tart/galette (or maybe several different types of tarts on puff pastry. So easy but looks nice and can be served warm or room temperature.) Bon Appetite or Half Baked Harvest will have good ones.

My Indian parents/relatives/friends go on and on about how bad veggie burgers are here bc they are made of beans, rice, soy etc. -- and are forever comparing them to veggie burgers back home which are essentially potato patties. FWIW Indian vegetarians love potato in every form.


Veggie burgers here are terrible because they’re frozen hockey pucks. If you make them from scratch—not hard!!—you can make them from whatever you want. Potatoes wouldn’t be my choice personally (potatoes between two buns?), but any combo of beans and veggies with some seasonings, panko or oats, and eggs can make a great burger!

I'm the PP you're quoting - yes Indians from India do think a potato between 2 buns is a great meal; it is a carb heavy diet - as you can sometimes see by physique. I'm sure yours are better than the frozen pre made ones, I'm just saying that I wouldn't go thru the effort of making them for people who'll just be thinking - hmm potatoes are better than this.


Just spice it properly so that there is some taste. A potato burger or even peas burger needs spices and herbs in the burger to spice it up. I think Indians complain about lack of taste and bland food. Beans, veggies, seasoning, herbs, ginger garlic, some heat, panko etc sounds very good.

How about an herby frittata with asparagus and then green beans/corn succotash and sliced fresh tomatoes? You are trying to NOT cook Indian, right?

Or a tomato/leek/herb tart with a green salad and sauteed zucchini?

Yes. Please post recipe for Indian veggie burgers, PP. Even if they are 90% potato. Not all of us on DCUM think potatoes are poison.
