Ours is old, so the specific lines are different, but we have all Hansgrohe fixtures. They've held up for 15+ years and we're happy with them.
Pressure-balanced temp control ... I set a temperature on one handle, and the system balances the pressure coming from the hot water line and the cold water line to keep an even temp. Works great for situations like someone in the next room flushing a toilet or running hot water in the sink - shower temp stays constant. But we do have to adjust it seasonally as the cold water changes temperature. Hot water : cold water ratio does not always equal the same final temp.
We have:
One "temperature" setting (really a pressure balance setting)
Flow control for the main shower head
Flow control for side sprays (rarely used, tbh)
Flow control for a handheld head, mounted on the side.
If I turn them all on at once, pressure drops noticeably. I can run either shower head with the side sprays easily. The handheld head is mostly used for cleaning, we only use it at the same time as the main head if DH and I are showering together.

Another vote for polished nickel. It will show patina but I don’t mind that. I’m considering it for my kitchen faucet. Good idea?

Polished nickel is my preference, for the reason a PP said, it has a warmer look than chrome.

I have to have a shower head that can be removed. I don't feel clean unless the water can touch all parts. I like chrome and think it is timeless

Nowhere near as bad as nickel. Ugh, regrets. Chrome is much easier to care for.
