OP here and midway through the year I gave her hand soap and towels from Target and she was SO happy. Genuinely so. So that gives you an idea!

A gift basket with assorted fresh fruit and snacks from Harry and David — something that has a nice variety but not too much of any one item.

If there’s a place where teachers get lunch near the school, you can her get a gift card from there.

Flowers — the teachers where I worked really loved getting flowers that a florist arranged.

I might be totally off-base here, but what about a really nice thermos or water bottle (Yeti, Hydroflask, etc.)? This would be a practical "small luxury" she'll be able to use forever.
