I never liked salad dressing but learned that some fat makes the salads healthier. A little EVOO is great, if not a squeeze of lemon, an orange could work.
Also agree with hummus. Raita works, too

Citrus juices in place of the vinegar will still give nice acidity and bite
If you can find it, Salata is a reduced strength vinegar that Germans use in their salads. It’s infused with herbs (and sadly, a bit of sugar), but it’s not particularly vinegary.

Depending on what's in the salad, I thin out some hummus with olive oil and a little bit of lemon (you could substitute some water) and that's an easy yummy dressing.
